Black Caviar

Black caviar refers to the harvested roe (eggs) of a mature sturgeon fish. Traditionally, black caviar referenced the roe of sturgeon caught and processed from the Caspian and Black Sea. Today, black caviar typically refers to the roe of sturgeon fish from around the world, including the United States, China, Israel, and several other countries.

The most famous and expensive black caviar is the Beluga caviar. The beluga sturgeon boasts the largest roe of all sturgeons, and is also the most rare. Due to over-fishing, beluga has been labeled an endangered species and as of 2005, it is illegal to import any beluga (including caviar) into the United States.

Currently, Ossetra caviar is the most popular black caviar. Although it is also labeled an endangered species (as are most all sturgeons), Ossetra caviar continues to be legally imported into the United States under strict CITES standards set forth by the United States Fish and Wildlife Service.

Sevruga caviar is the third type of caviar found in the Caspian and Black Sea (with Beluga and Ossetra being the other two). Sevruga is a smaller sturgeon than Ossetra and is also more abundant, which is reflected in its price when compared to other types of black caviar.

Other types of black caviar include the California White Sturgeon, typically found along the northern coast of North America, and the Siberian Sturgeon.

When compared to other types of "caviar", such as Salmon caviar and Paddlefish caviar, black caviar is considered the finest caviar available.
